Beltane Sundance - Goat - Lebanon, CT                                               
This goat’s milk version of ricotta salata is creamy and sweet. Hand-pressed and hand-salted at Beltane Farm this cheese is also good for shaving and grating, paired with Bonnie’s Black and Blue.   

Paired with: Charles De Fere Reserve Rose - A salmon pink sparkling rose bursting with ripe raspberries, strawberries, and red currants.

Spring Brook Tarentaise - Raw Cow - Reading, VT                                                 
This Alpine style cheese is nutty and robust. A great example of artisanal cheeses available in the states, these wheels keep getting better and better, paired with Champlain Valley Apiaries Honey.

Paired with: Sky River Dry Mead - With hints of berries, pears, apples and grassy fields, Mead is the ancient drink of kings and poets.

Midnight Moon - Goat - California/Holland       
This Gouda style cheese from Cypress Grove Creamery in Arcata, CA is firm, dense, and smooth. A slight grainy texture adds to the overall experience as well as a sweet caramel finish, paired with Askinosee White Chocolate.

Paired with: Brooklyn Black Chocolate Stout - An award winning rendition of the Imperial Stout style, this beer is luscious, dark and chocolaty.

Munster Gerome - Cow - France
A pungent cow’s milk cheese from the Vosges, a region between Alsace, Lorraine and Franche-Comte, that is creamy and rich, paired with El Ceibo Uyuni Salt and Cocoa Nibs Bar.

Paired with: Vietti Barbera D'Asti - A dry, medium bodied red wine with ripe red cherry aromas and hints of mineral and vanilla.

Bleu des Basques - Sheep - France               
This Sheep’s milk blue is from the Aquitaine, home to French Basque country. The hilly pastures of this region give the cheese it’s spicy, earthy complexity, paired with a Chucklet Truffle.

Paired with: Quinta do Portal Tawny Port - Big and brawny, with plump cherry-berry fruit joined by citrus and caramel.
