This Cheddar by Andy and Mateo Kehler is the culmination of years of perfecting the recipe, aging process, and distribution methods of the Cellars at Jasper Hill making an English Style Cheddar that pairs beautifully with English Ales.

From Vermont Shepherd Farm comes a lovely sheep’s milk cheese that is crafted only during the pasturing season when the sheep graze freely on the clover and herbs of the pastures.

4. Twig Farm Wash Rind - Raw Goat and Cow - West Cornwall, VT
Aged for 80 days, this cheese is soft textured and full flavored, making it the perfect balance to a bright and effervescent beverage.

5. Appenzeller - Raw Cow - Switzerland
A wonderful alpine style cheese from Rolfe Beeler, it is named after the Swiss Canto, Appenzell. While the cheese ages it is washed with a herbal brine that imparts a rich herbaceous flavor that is finished with a nice sweetness.

This cow’s milk cheese is aged up to 7 years, creating as robust and complex Gouda that has become a house favorite at Caseus.

This raw-milk version of the British classic stilton, is creamy and dense with a fudgy texture and sweet finish that compliments the maltiness of the beer it is paired with.
