Humboldt Fog - Goat - Arcata, CA
This bloomy rind chevre is the signature offering from Cypress Grove Chevre. Founded by Mary Keehn, Cypress Grove is currently celebrating its 20th anniversary!   

Paired with: Saddleback Kolsch Style Ale - a crisp light all malt beer with roots from an Eastern European lager. The Czech hops balance the pale malt, revealing balance and natural drinkability.

Seal Cove Olga - Raw Cow & Goat - Lamoine, ME                                                        
This wash rind cheese is aged for 60 days and uses the milk from Seal Cove’s heard of 140 goats as well as cow’s milk from a Neighbor’s herd. Named after an intern, this cheese honors her contributions to Seal Cove’s product line.

Paired with: Runabout Red Ale - A clean, well-balanced beer with a smooth sweetness that comes from 3 different caramel malts

Hudson Red - Raw Cow - Ghent, NY
The cheese makers at Twin Maple Farm in the picturesque Hudson River Valley have created a New World gem that is pungent and rich with a sweet finish.

Paired with: Elegan’s Saison -  a smooth ruby red colored winter saison brewed with Pineapple Sage, an herb from the mountains of Central America long used as a tension reliever

Cheddar Montgomery - Raw Cow - United Kingdom       
This wonderful bandaged cheddar is aged 13 months and offers an earthy complexity and sharpness to compliment this clean and flavorful IPA.

Paired with: Frye’s Leap IPA – American-style India Pale Ale with a strong hop flavor and aroma from extra dry hop conditioning.

Gruyere Rolf Beeler Select - Raw Cow - Switzerland                                  
Rolfe Beeler travels the Swiss countryside sourcing the most discerning cheese makers throughout Switzerland for his line of cheeses that he oversees the aging of.

Paired with: Midnight Porter - Based on the traditional English style that was designed to be lighter than a stout and more drinkable at any time of day. Caramel malts give this ale body and black patent and chocolate malts provide its rich, chocolate-like flavor and ruby hue.

Pradera - Cow - Holland                      
This cheese is a masterpiece. Aged for over 3 years, it has a dry, crumbly texture with a sweet caramel finish that makes it the perfect pairing with beer.

Paired with: 2011 Barleywine
- Sebago Brewing Company's boldest beer ever at 12.5% ABV. Domestic malt and distinctly American hops produce this rich, full bodied ale that was barrel-aged in charred oak bourbon barrels for over eight months

Smokey Blue - Raw Cow - Central Point, OR                        
Rogue Creamery’s Oregon Blue was the first artisanal blue cheese made on the west coas,t so it’s only fitting they make the first smoked blue as well! Cold smoked for 16 hours over hazelnut shells, this cheese rocks.

Paired with: Lake Trout Stout - Dark and rich with a thick and creamy head. It is a full bodied stout brewed with oatmeal and plenty of hops to balance the roasted barley
