Boulder Knool is an enviromentally sustainable and pesticide-free farm the provides healthy local food to 35 community supported agriculture shareholders. They also donate a portion of their crop to neighborhood food banks and charitable orginizations.

D'Artagnan is dedicated to the quality and value of responsible and sustainable farming. Caseus gets most of our meats from D'Artagnan, including the Painted Hills Beef used for out cheeseburger, along with some duck products, the Berkshire Pork for our pork tenderloin salad, our whole chickens, veal products, duck eggs, delicious Hudson Valley foie gras, and last but not least, the lamb on our menu.
